Ingredients

  • 4 eggs
  • 150 grams of sugar
  • 1 pinch of salt
  • 60 grams of flour
  • 60 grams of cornmeal
  • ½ teaspoon baking powder
  • 350 grams of white chocolate
  • 500 grams of whipping cream
  • 500 grams of strawberries

Cake preparation

  1. Separate the eggs and beat the whites with water (4 tablespoons) until stiff.
  2. Add the sugar little by little, continuing to beat so that it does not go down.
  3. Then add the yolks, flour and yeast. Integrate until obtaining a homogeneous dough.
  4. Preheat the oven to 180 ° C and line a mold with parchment paper.
  5. Pour the previous preparation and cook for 25 minutes.
  6. Take out of the oven and let it cool down.
  7. When the cake is at room temperature, unmold and cut in half to get two circles.

Preparation of the filling

  1. Cut 300 grams of the white chocolate into small pieces.
  2. Heat the cream in a saucepan and when it boils, remove from the heat and melt the chocolate.
  3. Let it cool for about four hours (you can do this before preparing the cake if you are in a hurry).
  4. With the rest of the chocolate, make shavings using a grater or vegetable peeler.
  5. Clean the strawberries, separate 12 and cut the rest into slices.
  6. Cover the bottom of the cake with the cut strawberries and spread with half of the cream with chocolate.

  • 400 ml milk
  • 6 eggs
  • 100 grams of flour

Preparation

  1. Preheat the oven to 200 ° C.
  2. Beat 4 eggs with the sugar using electric stirrers until fluffy.

  • 1 vanilla bean

For the base:

  • 1 sheet of shortcrust pastry

To assemble and decorate:

  • 300 grams of strawberries
  • 50 grams of blueberries
  • 2 tablespoons strawberry jam
  • 50 grams of sugar
  • 20 grams of water

Preparation of the mousse

  1. Soak the gelatin sheets in cold water.
  2. Melt the white chocolate in a double boiler (you can also do it in the microwave).
  3. In a saucepan, heat the cream with the vanilla bean and add the hydrated gelatin sheets.
  4. When it starts to boil, pour in the chocolate, stirring with a wooden spoon.
  5. Spread the cream and mix using a spatula.
  6. Remove from the heat and reserve four hours.
