Italian Pizza Dough

What is the secret of true Italian pizza dough? How did it become so popular throughout the Western world? What ingredients does it have? How do you prepare? Find out about this and much more in the following article.

Pizza is the most exported and prepared food in the world. Some say that it was not actually born in Italy, but rather a Greek invention (they used pita bread). With the great influx of Italian immigrants, it reached other latitudes at the beginning of the 20th century and has undoubtedly reinvented itself in each restaurant that offers it on its menu.

Three factors are necessary to obtain the best pizza: the ingredients, the cook (pizzaiolo) and the oven, if it is made of clay, the better. The flour, the yeast and the water have a lot to do with the preparation, as well as the sauce or the mozzarella in the cooking.

One of the options for making Italian pizza dough has:

  • 400 grams of bread flour
  • 200 grams of plain flour
  • 1 cube of baker’s yeast
  • 320 grams of water
  • 40 grams of olive oil
  • 2 teaspoons of salt
  • 1 teaspoon of honey

It is prepared as follows:

Pizza

  • 1-Preheat the oven to 50 ° C.
  • 2-Put the ingredients all together and mix by hand or with the mixer.
  • 3-Knead well until you have a ball, which you will let rest in the oven already off for 3 hours.
  • 4-Stretch with a roller and place in a round mold previously greased with oil.
  • 5- Spread tomato sauce and then return to the oven.
  • 6-The rest of the ingredients will depend on your tastes and imagination. You can put whatever you can think of! Some options are tomato and basil, arugula and parmesan, tomato and garlic, onion, tuna, salami, etc.

Knowing the necessary amounts of each ingredient is vital for the pizza to be fabulous, but you also need a good arm to be able to knead a few minutes. Some prefer the highest pizzas and others the finest, both factors depend on it: quantities and kneading.

In this case, what you need is:

    • 1 kg of bread flour
    • ½ liter of warm water
    • 25 grams of salt
    • 50 ml olive oil
    • 25 grams of fresh baker’s yeast

Easy, fun and fast. Do you want to know how it is prepared?

    • 1-In a container, place a part of the flour (leave 4 tablespoons for later).
    • 2-Make a hole in the middle and add the yeast already dissolved in the water.
    • 3-Beat with a wooden spoon from the center outwards and mix little by little.
    • 4- Pour in the olive oil and salt.
    • 5-Keep stirring until the dough is somewhat sticky but firm.
    • 6-Prepare the countertop or a table to be able to work the dough.
    • 7-Add a little flour and pour the dough.
    • 8-Knead with both hands, with dynamic movements, until it is elastic and does not stick to your fingers, you will have to add the flour that you had reserved.
    • 9- This will take you about ten minutes (an incredible exercise).
    • 10-Cover with a cloth and let it rise for about 40 minutes (it will grow in size up to three or four times).
    • 11- During that time the experts take the opportunity to prepare the sauce and leave the ingredients that are put later ready.
    • 12-Cut the dough into four equal parts, stretch with a rolling pin until it is the thickness you want and place in a greased circular mold, and then take it to the oven, not before having spread the “special” sauce that you have prepared for that chance.
