Homemade Macarons recipe step by step

Before starting, it is good that you know that they do not usually come out perfect the first time we prepare them. But don’t be discouraged … you can try today, tomorrow, next time … (and eat them every day).

The secret is to get a good consistency of the dough and that the oven is at room temperature.

Ingredients

  • 60 g of almond flour
  • 140 g icing sugar
  • 2 egg whites
  • 30g sugar
  • Gel colorants to taste

Utensils

  • Spatula
  • Pastry bag with nozzle 10 or 12
  • Baking paper
  • Baking tray

Preparation

  • Separate the whites from the yolks and leave at room temperature.
  • Assemble the first ones with electric rods until the foam appears. There add the sugar and then a few drops of food coloring. You will get a kind of consistent and dyed meringue.
  • Now move on to what is called “macaronage”, that is, join the almond flour with the icing sugar and the white whipped to the point of snow.
  • Mix using a spatula with enveloping movements, first adding half of the preparation and then the rest. It must remain as an intermediate between liquid and thick.
  • Fill a piping bag with a 10 or 12 nozzle.
  • Use parchment paper to line a cookie sheet.
  • Make balls all the same size (approximately) and leaving a gap between them. Let dry at room temperature.
  • Meanwhile you can start the oven at 150 ° C. Put the tray and cook for 10 to 12 minutes. Remove and let them cool.
  • Unmold and fill with what you like the most. You need two cookies and a tablespoon of filling for each Macaron.

  • Put in the fridge for 2 hours and then fill the Macarons.
