Chicken And Vegetable Wok

We live at a hectic pace that hardly leaves us time to cook. Knowing quick recipes to prepare a complete and nutritious meal will help us escape from fast food while we continue to eat healthy. The  chicken and vegetable wok is one of these recipes, we teach you how to prepare it.

Ingredients

  • 2 carrots
  • 1 green bell pepper and 1 red bell pepper
  • 1 zucchini
  • 4 portobello mushrooms
  • 1 onion
  • 3 chicken breast fillets
  • Olive oil
  • Soy sauce

  • Wok
  • Cutting board
  • Cutting knife
  • Containers to reserve the ingredients

Preparation

  • Clean the chicken well and cut it into thick strips.
  • Cut the vegetables in julienne, it is how they are best in this recipe; although you can make smaller chunks.
  • Heat the wok without oil over high heat.
  • When it’s hot, add four tablespoons of olive oil.
  • When the oil is hot, add the chicken and brown it, turning it in the wok.
  • Remove the chicken once it’s done.
  • Poach the onion in the same oil until it turns transparent.
  • Add the carrot and sauté for a few minutes.
  • Add the peppers and stir until the ingredients are well mixed.
  • Finally, add the mushrooms and zucchini while stirring.
  • When ready, add the chicken and four tablespoons of the soybean oil again.
  • Stir quickly so the flavors blend well and remove the wok from the heat.
  • Serve the chicken and vegetables in bowls.

If you follow these steps, it will only take  20 minutes  and you will have enough for four servings.

You can use this recipe for your main dish or as a side. It is a very versatile recipe and you can change the ingredients to your liking.

For example, you can change the portobello mushrooms for other mushrooms that you prefer, or add aubergine, very typical in oriental cuisine. If you are going to use aubergine, remember to cut it and let it rest for a few minutes in water with lemon juice, so that it loses bitterness.

  • You can use any mushroom you prefer in place of the portobello.
  • To season you can also use sesame oil (which you will add together with the olive oil) and some nuts.
  • Serve the stir fry over  Asian rice or oriental noodles.
  • If you have a food processor, use it to cut the ingredients into thin sticks. In seconds you will have them ready to sauté in the wok.
  • You can season the recipe with a little ground black pepper and salt. Keep in mind that soy already provides the salty touch, do not add too much salt.
  • The mango technique is the most recommended for mixing ingredients in the wok. Take a firm grip on the handle and stir the wok vigorously. Meanwhile, add the ingredients with your other hand while continuing to move it.
  • Never use metal utensils in your wok, this will considerably decrease its useful life. The most advisable thing, if you do not want to use the handle technique, is to use a wooden or bamboo spoon, and stir gently.
  • Use whatever ingredients you want, but add them according to their cooking time. Add the ones that need more time to the fire first.
